Simmer, covered for 1-1/2 hours or until duck legs are very tender. Remove chicken and ducks from the broth mixture with a slotted spoon; set aside on a warm place. Discard vegetables in the broth mixture. To serve, divide cooked rice among four bowls. Arrange chicken and ducks on top of the cooked rice. Ladle some of the broth mixture over all. Sprinkle with parsley before serving
