Instructions:

  1. In a large bowl, combine the grated potatoes, flour, baking powder, salt and pepper. Mix well to combine.2. Heat 1 inch of oil in a large skillet over medium-high heat. Scoop out 1/4 cup of the potato mixture and shape into a cake. Carefully place the cake in the hot oil and fry until golden brown and cooked through, about 3 minutes per side.3. If using fresh thyme leaves, add at this point. Shape mixture into a cake about 1-inch thick and 10 inches in diameter. Place on a lightly greased baking sheet and bake at 400 degrees F for 25 minutes or until golden brown. Cut into wedges and serve hot. Enjoy!
